…that’s YOU-our Coffeehouse Investors!
Happy Thursday!
You certainly won’t be able to enjoy your financial stability to the full extent possible, without being healthy. Therefore, today’s blog will feature the health benefits of a food that is often overlooked, yet packed with vitamins and minerals, and will even reduce the appearance of wrinkles! I can’t say it’s the perfect food-it isn’t dark chocolate-but it is rich in nutrition.
Scientifically known as Cucumis sativus, the cucumber is a relative of the pumpkin and watermelon family. A native vegetable of northern India, cucumbers provide significant health benefits including aiding digestive problems and arthritis. Cucumbers are used externally, as well. They are used to assist in reducing inflammation, and can be effective in healing the effects of sunburn, and skin disorders, such as acne and dermatitis. Some cultures have used cucumbers as a beauty aid, and wrinkle eraser. Numerous spas, throughout the world, apply cucumber masks to reveal glowing complexions.
As a food, cucumbers can be used in a variety of ways; as an appetizer, in a salad, as a garnish, or even as a part of an entree. My Grandmother served a delicious, nutritious-and incredibly easy-cucumber appetizer, that is perfect for summer entertaining. I hope you enjoy it!
1 seedless cucumber, sliced thin or thick, as desired
1 1/2 cups hummus
Top each cucumber slice with a dollop of hummus, and garnish, as desired. You can add a bit of parsley or red pepper flakes, if you wish.
If you have a special use for cucumbers, please share it with us. As always, we love to hear from you-our Coffeehouse Community! And, don’t foget-even in this hot weather-you can “be cool as a cucumber!”
